We will harvest the grapes for this special wine on February 2nd. This day is also called Candlemas, so we have named the wine Candlemas Wine. The selected variety is Chardonnay. The grapes are dried, often also frozen. The sugars and acids are highly concentrated. The wine shows the richness of nature in all its majesty. The density, color, frosty hints, and maturity show that this is a wine of the highest class.
