Moto te penine je, da se najbolj\u0161e stvari dogajajo v temi. Po mnenju profesorice emeritus Ann C. Noble<a href=\"#_ftn1\" name=\"_ftnref1\">[1]<\/a> izpostavljenost vina dnevni svetlobi ali umetni osvetlitvi privede do tega, kar bi lahko ozna\u010dili kot \u00bbzaradi svetlobe spremenjeno aromo\u00ab (<em>go\u00fbt de lumiere<\/em>). Zato so se pri Radgonskih goricah odlo\u010dili <em>potopiti se v temo<\/em> in v njej pripraviti novo pene\u010de vino.<\/p>\n<p>Kar dela to penino edinstveno, je njen proces proizvodnje. Med no\u010dno trgatvijo, rotiranjem steklenic in pakiranjem se uporabljajo o\u010dala za gledanje v temi. Vino zori dve do tri leta v popolni temi v kleteh v Gornji Radgoni. Delavci Radgonskih goric to v \u017eargonu imenujejo \u201etema\u010dna metoda\u201c. Ko penina zapusti klet, jo \u0161\u010diti steklenica iz \u010drnega stekla, prav tako je steklenica zaradi dodatne za\u0161\u010dite od svetlobe in UV \u017earkov pakirana v vakuumirane vre\u010dke.<\/p>\n<p>\u201eUntouched by Light je edinstveno vrhunsko pene\u010de vino s katerim upamo, da bomo Radgonske gorice pozicionirali na globalnem tr\u017ei\u0161\u010du. Priporo\u010damo, da penino degustirate v temi, z nekom, ki vam je blizu, ker se najbolj\u0161e stvari odvijajo v temi,\u201c je povedal Borut Cvetkovi\u010d iz Radgonskih goric.<\/p>\n<p>Untouched by Light se proizvaja iz najbolj\u0161ega chardonnaya (100% chardonnay, blanc de blanc) po klasi\u010dni metodi s fermentacijo v steklenici. \u201cPrvi letnik penine Untouched by Light je izjemno sve\u017e, saden in citrusen s pookusom zelenega \u010daja in mete. Kar najdemo na nosu se nadaljuje v okusu. Zelo delikatni mehur\u010dki mu dajo kremnost. Je kot odmev, ki balansira med ne\u017enostjo in krepkostjo, ki sta si po navadi v nasprotju, a tukaj v harmoniji,\u201c je povedal Pierre-Yves Bournerias, sommelier z in\u0161tituta Oenologique de Champagne.<\/p>\n<p>Enologinja Radgonskih goric, Klavdija Topolovec \u0160pur, pravi: \u201ePri penini Untouched by Light bi rekla, da gre za penino navdiha. Posebnost obiranja v temi, v majhne zaboje, ko je hladno; posebnost predelave grozdja in predvsem kasnej\u0161ega zorenja v popolni temi, se odra\u017ea v karakterju penine. V bistvu vse, kar grozdje prinese iz vinograda, mo\u0161t, ter kasneje vino, se ohranja in danes odra\u017ea v penini, ki jo poku\u0161amo. Tako lahko poku\u0161amo penino, kjer je terroir res pri\u0161el do izraza. This sparkling wine&#8217;s motto is that best things happen in the dark. According to Professor Emerita Ann C. Noble<a href=\"#_ftn1\" name=\"_ftnref1\">[1]<\/a>, the exposure of wine to daylight or artificial lighting results in what is commonly known as light-struck aromas (<em>go\u00fbt de lumi\u00e8re<\/em>). For that reason Radgonske Gorice made a decision to <em>turn to the dark side<\/em> and produce their new sparkling wine.<\/p>\n<p>This wine is unique because of its production process. The night vison goggles are used for harvest, bottle rotation and packing. The wine is left to age <img decoding=\"async\" class=\"alignright size-medium wp-image-2703\" src=\"https:\/\/radgonske-gorice.si\/wp-content\/uploads\/2020\/10\/02_night_harvest-300x169.jpg\" alt=\"\" width=\"300\" height=\"169\" \/>for two to three years in Gornja Radgona cave in Slovenia, where it is untouched by the outside world, completely lightproof. In the jargon of Radgonske gorice this is popularly known as the <em>Crafted by Darkness<\/em> method. Once out of the cave, the wine is protected in a black lightproof bottle, packed in a vacuum-sealed bag blocking any additional light or air contact.<\/p>\n<p>\u201c<em>Untouched by Light is unique, premium sparkling wine, with which we hope to position Radgonske Gorice winery in the global market. It is highly recommendable to taste this wine in pitch darkness in good company, because the best things happen in the dark,<\/em>\u201d Borut Cvetkovi\u010d from Radgonske Gorice said.<\/p>\n<p>Untouched by Light is made from the best Chardonnay grapes (100% Chardonnay Blanc de Blancs) using the famous inside-the-bottle French fermentation method. \u201c<em>The first 2016 vintage is extremely fresh, fruity and citrusy with the aftertaste of green tea and mint. There is a continuation from the nose to the mouth. Very delicate bubbles give creaminess to the wine. It\u2019s like an echo, balancing between the softness and crispiness which are usually in contradiction, but here they are together.<\/em>\u201d, said Pierre-Yves Bournerias, the sommelier from the Institut Oenologique de Champagne.<\/p>\n<p>The winery\u2019s oenologist Klavdija Topolovec \u0160pur said: \u201c<em>Untouched by Light is a sparkling wine inspiration. Special harvesting by night, when it\u2019s cold, using small crates; the grape processing method, but above all late maturation in complete darkness \u2013 all of that can be found embedded in the character of this wine. We can now taste both the wine and the fullness of its terroir. The last piece of the puzzle is the tradition of sparkling wine production in Radgonske Gorice winery, buttressed by profound knowledge and state-of-the-art technology.<\/em>\u201d<\/p>\n<p>While the winery is currently in search of local distributors across the globe, the limited 2000 samples of the 2016 Untouched by Light vintage are now available for orders on\u00a0 <u><a href=\"http:\/\/untouchedbylight.com\/\" target=\"_blank\" rel=\"noopener\">untouchedbylight.com<\/a><\/u> only.<\/p>\n<p>Radgonske Gorice winery from Slovenia has a 168-year-long tradition of sparkling wine production. It was inaugurated by Alojz Kleno\u0161ek when Archduke John of Austria, a member of the House of Habsburg-Lorraine, expanded the wine production in this region.
