Po polnitvi tiraže in sekundarni fermentaciji  penina leži na kvasovki 36 mesecev. Kozarec napolnita sijoča, svetlo rumena barva in močno, stabilno iskrenje. Zaznamo cvetlične note in note lipovega cvetja, ki se nadaljujejo v note po kruhovi skorji in kvasu.
